May 18, 2016 at 12:36 comment added leftaroundabout I would remark that “oily steam” isn't the right term – that would be water vapour with oil droplets dispersed in it: hardly be a plausible cancer risk because it consists of harmless chemicals which are so hot that nobody would breathe in significant amounts. What the studies listed by Gareth Rees investigate is smoke, namely the smoke that oils generate when heated above the smoke point. This has nothing to do with steam, in fact its formation can largely be prevented if enough water is present to keep the oil temperature below smoke point.
