Assuming that a person has 14 days of vacation time per year, are there any studies that show whether or not distributing the vacation days over a 14 week period would have any benefits to alleviating a person's overall stress at the workplace?

Anectdotal evidence: not at all, because you are generally expected to do the same work in 4 days as if not taking holidays. – Sklivvz Apr 18 '11 at 8:06
@Sklivvz - possibly true (depends on the manager), but OTOH (from personal experience) you get to sleep more on TWICE as many days (especially if you take off Tue/Wed/Thu only). To peolpe with long work commute this is a big plus. Anecdotal evidence, thus a comment instead of an answer. – DVK Apr 18 '11 at 14:44
@DVK - also it depends whether you are the manager :-) – Sklivvz Apr 18 '11 at 14:45

I think this is going to depend entirely on the person and how they function. Some people might desire the longer vacation to completely recharge their batteries or to simply get away and forget about the stresses of life.

Others might just like a longer weekend and not have to worry about all the things that could possibly go wrong while they are gone, or all the things that will be waiting for them to do when they arrive.
